    1 egg
    2 egg whites
    2 Tbsp 2% shredded cheddar cheese
    1/4 cup cooked, thoroughly drained spinach
    4 baby bella mushrooms, sliced
    Olive Oil, 1/2 Tbsp

    1 small green onion, white and green part, sliced on diagonal.


Combine first 5 ingredients.

Add 1/2 Tbsp Olive Oil to non-stick omelet pan over medium heat.

Add mixture and cook until set to preference.
Top with green onions.

Serves 1
