    4 cups sliced onions (preferably red)
    4 serrano peppers, cut into fourths lengthwise
    2 cloves of garlic, halved
    2 tbsp vinegar
    salt and pepper to taste


Heat skillet, add oil. Fry garlic and serrano peppers to flavor oil. Add sliced onion and sautee until onion is limp but not burned. Season with salt and pepper. Add vinegar and cook for a few minutes. Serve warm as a side dish or add to sandwiches.
