    12 oz. Tofu, extra firm
    1 Tbsp. Canola Oil
    1 Tbsp. Peanut Butter
    2 Tbsp. Peanuts, dry-roasted, .125 cup (remove)
    3 cloves garlic
    6 oz. whole wheat spaghetti
    6 oz. Baby Cut Carrots
    1/2 cup Broccoli, cut up
    1 green onion chopped
    1/4 cup frozen Peas
    1/4 cup frozen Sweet Corn
    1/2 cup fresh Snap peas
    1 Tbsp Peanut Butter


Prepare noodles in boiling water.

Pour oil into pan, add peanut butter, onion, tofu, peanuts, and garlic. Add vegetables, cook till tender. After noodles are cooked, stir together.

Serving Size: 4 (1 1/2 cup servings)
