Ingredients

3 T Olive Oil
1/4 cup water
1 lb Owens Hot Sausage
1 cup chopped onion
2 garlic cloves, minced
1 tsp red pepper flakes
28 oz can peeled (or crushed) tomatos
1 quart (4 cups) water
16 oz pasta (this was a mix of primarily orecchiette and fusilli)
3 cups kale (or broccoli rabe)
Tips
can add parmesan cheese to finish. goes well with crusty bread.
Directions
1. In a large pot (dutch oven) over medium high heat, put oil, water and sausage. Cover and cook until water evaporates.
2. Fry the sausage until brown on all sides. remove sausage and drain
3. Add onion, garlic and red paper flakes to pot. Cook for 2 minutes until soft.
4. Return sausage to pot. Add tomatoes and water. Bring to a boil.
5. Add pasta and cook for 10 minutes
6. add kale and cook for another 5 minutes
Serve hot.
