Introduction
This unbelieveably tastes like pasta and can be a great low carb alternative in the summer. The spaghetti squash is great more for winter, but this is very fresh and light. Directions
If you have a mandolin with a square shaped grater to make mock zucchini pasta shreds that is best. If not you can press down firmly on a cheese grater to gt larger shreds of zucchini. Grate 1-2 zucchini and dice tomato in to small squares if they are juicy make sure to get the juice into the bowl with the zucchini. Squeeze half a lemon over, sprinkle salt, and tear up the basil, drizzle olive oil and toss. You can serve immediatly for cover and refrigerate
