    ♦ 2 cups cauliflower
    ♦ cup celery, diced
    ♦ cup scallions, diced
    ♦ 1 hard-boiled egg, chopped
    ♦ 2 tablespoons light mayonnaise
    ♦ 1 tablespoon mustard


⅓ Lean Protein ⋅ 3 Vegetables ⋅ 3 Condiments


♦ Steam cauliflower for 15 minutes or until it reaches the same texture as cooked potatoes.
♦ Rinse in cold water to cool; pat with paper town until dry.
♦ Chop cauliflower into small bites.
♦ Mix into a bowl with scallions, celery, and eggs.
♦ Add mayonnaise and mustard and mix well.
♦ Cover and chill for one hour before serving.
