    2 C warm water
    1 oz. yeast
    1 tsp. sugar
    2 tsp. salt
    5 to 5.5 C flour


Place each pita under a clean dishcloth after the pita is removed from the oven. As the steam evaporates, the towel will keep the moisture in the pita.


Preheat oven to 500 degrees and insert pizza stone.

Put 2 cups of warm water in bowl; sprinkle yeast over water to dissolve for 5 minutes. Add sugar and whisk. Mix salt and flour. Add 4 cups of flour to mixture and blend with spatula. Add last cup by hand as you knead the dough. Knead for 5 minutes until dough is smooth and tender. Let rest 10 minutes.

After oven has maintained 500 degrees for 15 minutes, divide dough into 8 equal parts. Shape each piece into a ball by stretching the outer layer around the whole ball. Press together on the bottom to create a seal. Bake two pitas at a time for 2 minutes each. Steam will create the pocket!
