A cake-like muffin that satisfies a sweet tooth and a great breakfast choice. A cake-like muffin that satisfies a sweet tooth and a great breakfast choice.
Number of Servings: 12


    1/4 cup canola oil
    1/2 cup brown sugar
    1 large egg
    1 large egg white
    1 tsp vanilla
    1 cup mashed banana, about 2
    1 cup graham flour
    1 tsp baking powder
    1/2 tsp baking soda
    1/2 tsp cinnamon
    1/4 tsp nutmeg
    1/4 cup chopped pecans, toasted


This can be made into bars, in an 8x8 pan...Just bake for 40-45 minutes...let cool and shake a little powdered sugar for a nice finish [not included in the calorie count]


In a large bowl, beat the oil, sugar, eggs vanilla, and banana together.

Add remaining ingredients and mix until blended.

Scoop approximately 1/3 cup of batter into muffin cups.

Bake in preheated 350F oven for 25 minutes or until top springs back when touched lightly.

Serving Size: 12 large muffins, or 36 mini muffins
