Introduction

Ingredients

    1 tbsp coconut oil
    1 clove garlic, minced
    3 tbsp onion, chopped
    1/4 cup fresh baby spinach leaves
    1/4 fresh jalapeno pepper, chopped
    2 or 3 slivers of a sweet red pepper, chopped
    1 large egg
    1 large flour tortilla
    1 tbsp shredded Mexican 4 cheese blend
    1 tbsp picante sauce

Tips

You can add more veggies to this, such as fresh avacados and/or sundried tomatoes as toppings.


Directions

Start with coconut oil, saute in spinach leaves, garlic, onion, jalapeno and red peppers until tender. Add egg and scramble in. Serve on a tortilla with a dab of picante and shredded cheese. You can add a bit of salt and pepper to taste, but I find it usually doesn't need salt with the picante sauce and cheese.
