Introduction

Old fashioned bean salad. The original recipe calls for 3/4 cup sugar. I reduced it to 1/4 cup. I also substituted a cup of chickpeas for the original wax beans. Ingredients

    Green Beans (snap), 2.25 cup (remove)
    Chickpeas (garbanzo beans), 1 cup (remove)
    Beans, red kidney, 1 cup (remove)
    Onions, raw, .5 cup, chopped (remove)
    Sweet peppers (bell), .5 cup, chopped (remove)
    Olive Oil, .25 cup (remove)
    Cider Vinegar, .75 cup (remove)
    Granulated Sugar, .25 cup (remove)
    Salt, .5 tsp (remove)
    Pepper, black, .25 tsp (remove)
    Tarragon, 1 tsp fresh

Directions

Mix the (cooked) beans, onions, and peppers.
Whisk together the oil, vinegar, sugar, tarragon, garlic, salt and pepper.
Add the dressing to the salad, cover and chill for at least 6 hours.

Serving Size: 4 servings (aprox 1.25 cup)
