Ingredients

    4 c Red Ripe Tomatoes, 4 cup
    2 medium Cucumbers (peeled)
    1 Jalapeno
    1Yellow Peppers
    1/2 small red onion
    Lime juice from one lime
    Cilantro
    1/4 c hulled, roasted Pumpkin Seeds

Directions

Chop tomatoes, cucumber, peppers, and onion. Blend together until pureed. Mix in lime juice (and salt and pepper to taste). Chill for at least 20 minutes in fridge. Garnish with cilantro, pumpkin seeds, and a dollop of sour cream.

Serve with quesadillas, cheese sanwiches, tortillas, tortilla chips ...
