    4 cups arugula
    2 cups baby spinach
    1/3 cup thinly, vertically sliced red onion
    1 1/2 Tbs fresh lemon juice
    1/2 tsp dijon mustard
    1/2 tsp honey
    1/4 tsp salt and 1/4 tsp black pepper
    1 small clove garlic, minced
    2 Tbs extra-virgin olive oil
    1 cup pitted halved fresh Rainier cherries
    1 oz. crumbled goat cheese
    1/4 cup salted dry-roasted pistachios


used 2 servings for a dinner meal.


Combine arugula, spinach and onion in large bowl.

Combine juice, mustard, honey, salt, pepper and minced garlic clove in a medium bowl, stirring with a whisk. Gradually add oil, constantly whisking. Drizzle over salad and toss. Top each salad with 1/4 cup cherries, 1 Tbs cheese and 1 Tbs nuts.
