    *Potato, raw, 5 medium (2-1/4" to 3-1/4" dia.)
    Grapeseed Oil, 1 1tsp
    Leeks, 1 leek
    Garlic, 2 cloves
    Water, tap, 6 cup (8 fl oz)
    *(OXO) Vegetable Stock Cube, 2 serving
    Bay Leaf, 1
    Parsley, 2 sprigs
    Simply Organic Milk (standard) - 200ml, 1.25 serving
    Parsley, chopped .25 cup
    Salt, 1 dash
    Pepper, black, 1 dash


Served topped with grated cheese (not included in nutrition info).


Heat oil in heavy bottomed stock pot. Thinly slice white of one large leek, and sauté along with crushed garlic until leek is tender. Add water, stock cubes, bay leaf and parsley sprigs and bring to boil. Peel and chop potatoes, and add to boiling soup. Bring back to boil and simmer for 20 - 25 minutes, until potatoes are cooked. Remove herbs. Use a immersion blender or potato masher to blend the potato into the soup. Stir in the milk and chopped parsley, and season to taste before serving.
