Number of Servings: 6


    1 cup Quinoa, uncooked
    2 Cups low-sodium vegetable broth
    1 15-oz can black beans, rinsed
    1 15-oz can diced, low-sodium tomatoes
    Frank's hot sauce


Combine broth and Quinoa in microwave-safe dish. Cover loosely and microwave on high for 10 minutes. Stir and let sit for 10 minutes then cook on high for another 8 minutes.
Drain and rinse black beans and add beans and tomatoes to quinoa.
To serve, spoon into dish and top with hot sauce (optional).

Serving Size: makes approx. 6 1-cup servings
