    1 lb. pork or chicken fajita meat
    Pam cooking spray
    1 medium onion, chopped
    Minced garlic, 2 tsp.
    2 tsp. cumin
    1 can black beans, drained and washed
    1 can rotel
    6 oz. velveeta (light)
    1 pkg. cornbread mix (without sugar preferred)
    1 egg
    1/3 cup skim milk


Preheat oven to 400 degrees. Brown meat in olive oil and add juice from rotel after a minute or two. When almost done, cover and add garlic, onion and cumin. Continue to cook and add rotel and beans after another minute.

Spray an 8x8 baking dish with Pam. Pour in meat mixture and spread evenly. Mix cornbread pkg., egg, and milk together and stir just until mixed. Cut velveeta into small cubes and spread evenly over meat mixture. Then pour cornbread mixture over the top being careful to cover the contents well.

Bake 20-25 minutes until cornbread is golden brown. Let dish set for 5 minutes before cutting to serve.
