This is a recipe that I adapted from one I had. This is a recipe that I adapted from one I had.
Number of Servings: 12


    1 cup mashed banana
    1/4 cup Splenda Brown Sugar Blend
    1/2 cup Motts Healthy Harvest Blueberry Delight Applesauce
    2 tb chopped pecans
    1 scoop protein powder
    2 tb wheat germ
    1 egg
    1/2 tsp baking soda
    1 tb baking powder
    1/2 tsp vanilla extract
    1/4 tsp salt


I used the flavored applesauce because that is what I had on hand.


Mix all wet ingredients in small bowl. Mix all dry ingredients in medium bowl. Add wet to dry and mix until moistened.

Bake at 350 for 15-20 minutes or until toothpick comes out clean.

Serving Size: Makes 12 muffins
