Ingredients

    10 Med Baby Carrots sliced
    1/3 cup canned corn
    1/2 cup chopped broccoli
    1/2 cup chopped onion
    1/4 cup sliced mushroom
    1/2 cup rice noodles
    1tbsp peanut sauce, Bangkok Padang (if you like it super spicy add another tbsp of sauce and an additional 45 calories)

Directions

Boil water and add rice noodles for 8 minutes.
Chop and slice carrots, broccoli, onion, and mushroom.
Heat pan withcooking spray, then add all veggies.
Heat veggies through for 10 mintues, then add rice noodles and peanut sauce.
Heat another 10 minutes then serve!

    I made this dish into a salad. Rinse the noodle after cook with cold water, add stirfry vegies, mix peanut sauce with rice or balsamic vineagar and brown sugar, top it with ground peanut and chop spring onion. Delicious! - 8/27/11
