Ingredients

    2 1/2 pounds chicken breast, sliced into strips
    1 cup red bell pepper, sliced into strips
    1 cup green bell pepper, sliced into strips
    1 cup yellow bell pepper, sliced into strips
    2 med. onions, sliced into strips
    1 1/2 tsp garlic powder
    1 T. chili powder
    1 T. Cumin powder
    1 T. Coriander, ground
    2 T coconut oil or red palm oil for cooking
    5 limes, juiced

    Lettuce leaves or corn tortilla's to eat with meat.

Directions

Slice all veggies and meat. Mix spices, squeeze limes.

In large bowl, stir together all ingredients. If time allows, let marinate for several hours, or just cook after all ingredients are blended well.

In large skillet or wok, melt cooking oils. When hot, start cooking. You may need to cook in batches or if using a wok, put everything in and stir together, cooking on high heat. Then place lid over top to hold in heat and cook everything, about 15-20 min.
