Ingredients

    5 Cups Chicken Broth, low sodium, fat free
    1 Large Boneless Skinless Chicken Breast
    1 Package Noodles (I used Japanese Udon)
    1 Bunch Fresh Cilantro (washed and tied)
    Fresh Basil Leaves
    10 oz Bean Sprouts
    1 Avocado Sliced
    4 oz Fresh Ginger (peeled)
    4 Cloves (Whole)
    1/4 Tsp Ground Coriander
    1/2 Cup Mushrooms, sliced
    1 Serrano Pepper, chopped
    4 Scallions
    4 Cloves Garlic
    1 Large Yellow Onion
    2 Limes
    Red Chile Paste

Directions

Add coriander, whole cloves, garlic, ginger, cilantro and all but 8 paper thin slices of the onion to broth. Bring to boil. Reduce heat and simmer 20 minutes.

While broth simmers, wash and dry basil leaves, rinse bean sprouts, slice avocado, chop scallions and serrrano pepper. Chill reserved sliced onions in water. Wedge Limes.

Cook noodles as directed.

Add Chicken Breast to broth and cook until done.
Remove chicken, strain broth and add mushrooms, simmer for a few more minutes.
Cube chicken breast.

Divide hot noodles and cubed chicken into 4 bowls and cover with steaming hot broth. Garnish with bean sprouts, basil leaves, sliced onions,scallions and sliced avocado. Squeeze with lime. If you like heat add some serrano peppers and a bit of red chile paste. MMM Good.
