    1 c. ground almonds
    1 c. Kellog's All-Bran cereal
    1/2 whole wheat flour
    3/4 c. low fat buttermilk
    2 eggs
    1 tsp baking soda
    4 tsp Splenda (or more to your taste)
    1 tsp vanilla or butter flavoring


Mix together eggs, buttermilk, and flavoring then add All-bran. Let sit while you combine all the dry ingredients. Mix the two together lightly. Spray a 12 cup muffin pan with cooking spray and add about 1/3 cup of mixture to each cup. Bake at 350(325 for gas ovens) for 20-25 minutes or until fork comes out clean. Yields 12 muffins.
