Ingredients

1 large can coconut milk
Hot curry powder (madras if possible)
1 Green Chilli Pepper, chopped
1 Can tomatoes
1 large potato
1-2 medium carrots
1-2 handfuls of broccoli (frozen)
Directions
1) Chop potato n boil for 20 minutes (add your broccoli and chopped carrots after 10 minutes)
2) add coconut milk to a saucepan over low heat.
3) stir in curry powder (i use around 100 grams but you'll know how much seems right)
4) chop the chilli and chuck into the mix
5) add the can of tomatoes.
6) when ready (and you may have to leave the mix to simmer for a bit) drain the potatoes and other veggies and add to the curry.
7) serve with rice, preferably brown for a healthy option!
Tips: 1,Serve with naan bread and/or poppadoms.
2, may sure there are drinks available...it's very hot!
