Introduction

Ingredients

4 large sweet potatoes, skins scrubbed
1/2 c Smuckers low sugar sweet orange marmalade
Optional: any spices desired (cinnamon, garam masala, nutmeg)
Directions
Steam sweet potatoes on stovetop or in slow cooker. Stovetop: Peel sweet potatoes and cut into 1" rounds, place in steamer basket over boiling water for 10 - 15 minutes or until very soft.
Slow cooker: Put about 1/2 c of water (or enough to cover bottom of slow cooker) in slow cooker. Cut unpeeled or peeled sweet potatoes in half and place in slow cooker. Cook on low for 8 hours. Scrape out of peels after potatoes cool enough to handle.
Mash sweet potatoes with marmalade and any spices used.
Nuts could also be added, if desired.
Serving Size: Makes 4 servings if used as a side dish, 2 servings if used as the main dish
