Introduction

High protein meal that cooks up fast! High protein meal that cooks up fast!
Number of Servings: 2

Ingredients

    -2 servings of bacon (about 4 thick cut slices or 6 regular ones)
    -3 large eggs
    -3 fresh egg whites
    -fresh spinach (I used 119 grams or about 3 cups raw)
    -30 g grated parmesan or romano cheese
    -31 g sun dried tomato, chopped (the dehydrated kind, not packed in oil)

Directions

1. Preheat oven to 375 degrees. At this point, you can either cook your bacon in the microwave or the skillet. I chose the microwave so I could drain the grease. But I'm sure it would taste great either way. :)

2. Heat a small, oven safe skillet (I use cast iron) to medium heat on the stove. Spray with Misto or non-stick cooking spray if you cooked your bacon in the microwave.

3. Saute sun dried tomato, chopped cooked bacon, and fresh spinach until spinach wilts.

4. Meanwhile, whisk eggs and egg whites together and stir cheese into the eggs.

5. Stir egg mixture into the skillet until just combined.

6. Bake until frittata has set - can be 5 to 10 minutes.
