    * Basil, 2 tbsp (remove)
    * Parsley, 2 tbsp (remove)
    * Oregano, ground, 1 tbsp (remove)
    * *Extra Light Olive Oil, .5 tbsp (remove)
    * Salt, .75 tsp (remove)
    * Pepper, black, .25 tsp (remove)
    * Garlic, 5 cloves (remove)
    * Roasting Chicken, light meat, 1000 grams (remove)


Preheat the oven to375, combine the basil, parsley, oregano, rosemary, oil, salt & pepper in bowl. Rinse the chicken inside & out, pat dry with paper towels. Carefully life the skin from the chicken breast and thighs & rub the herb mixture evenly outside the chicken, under the skin, and in the cavity. Place the rack of a roasting pan in the pan, spray with canola nonstick spray. Place the chicken, breast side up on the rack. Place the garlic in the chicken cavity.
Roast the chicken, basting occasionally with the pan juices, until a thermometer inserted into the thigh reads 180 (1 1/4 - 1 1/2 hours). Transfer the chicken to a cutting board. Let stand 10 mins before carving. Remove skin before eating.
