Ingredients
-
1 pound lean ground turkey
2 cups onion, chopped
1/2 cup green bell pepper, chopped
6 cloves garlic, minced
12 ounces tomato paste (2 cans)
2 cups red kidney beans, rinsed and drained
2 cups black beans, rinsed and drained
2 cups great northern beans, rinsed and drained
15 ounces canned tomatoes, diced
1 tablespoon mustard
1 teaspoon pepper
1/2 teaspoon salt
1/2 teaspoon cayenne pepper
1/2 teaspoon cumin
1/2 cup fresh cilantro
Tips
I normally use no salt added canned foods, so a little salt is needed. I would recommend not adding any salt if using canned foods already containing salt.
Directions
In a very large skillet cook ground turkey, onion, bell pepper and garlic until meat is browned. Drain fat. Place mixture in a slow cooker. Add tomato paste, beans, canned tomatoes and all seasonings. Stir to combine.
Cover; cook on low-heat setting for 8 to 10 hours or on high-heat setting for 4 to 5 hours.
