Number of Servings: 8


    2 lbs zucchini
    1 c bread crumbs
    1 c chopped onion
    2 eggs (beaten)
    1/2 c grated parm
    1/4 c chopped parsley (or any other fresh herb, really)
    salt and pepper to taste
    2 T olive or veg oil
    1/4 c flour


You can serve with black beans, etc for a good vegetarian meal.


Grate zucchini and put in colander to drain (wouldn't hurt to try to squeeze some liquid out). Mix all ingredients except oil and flour in large bowl. Add more crumbs if you need to make it hold together a bit. Refrigerate mixture for at least an hour, preferably 3 or 4.

Heat some oil in large skillet (you're going to have to cook in batches). Form 8 patties from the mixture. Dredge the patties in the flour and fry them in the skillet on Med-High until golden on both sides.
