    Potato, yukon gold, raw, 8 medium (2-1/4" to 3-1/4" dia.)
    Onions, raw, 1.75 cup, chopped
    Olive Oil, 3 tbsp
    Garlic, 3 tsp
    Chicken stock, home-prepared, 2.5 cups
    Water, 1.5 cups
    Heavy Whipping Cream, 2 cups
    Salt, 1 tsp
    Pepper, black, 1 tbsp


1. mince onion and garlic
2. sweat onions in olive oil until nearly caramelized.
3. chop potatoes into small 1/2 inch pieces.
4. add stock, water, garlic, salt, pepper, and potatoes
5. bring to boil, then lower heat (slow simmer-boil) and cook until potatoes are soft.
6. immersion blend until creamy.
7. add heavy cream and stir in, bring heat back up but do not scorch (not a rolling boil).
8, serve and enjoy!

Serving Size: makes about 8 (eight) 1.5 cup servings
