    1 Sweet Onion, chopped
    1 Sweet Potato, cubed
    2 bell peppers, chopped
    3 cloves garlic, minced / crushed
    2 tsp olive oil
    4 cans black beans (drained)
    1.5 T cumin
    2t coriander
    2t chili powder
    1t crushed red pepper


Serve over rice or greens. Some jack cheese, sour cream, green onions, and sriratcha are my favorite adornments.


Add oil to 3qt or larger sauté pan on medium heat
Add sweet potato and cover cooking until almost soft
Add onion and cook until soft
Add garlic
Add bell peppers
Add beans
Add spices
Stir until desired thickness and the flavors start to come together.

Serving Size: Makes 6 2-cup servings
