    1 cup blueberries
    2 tsp baking powder
    3/4 cup low fat yogurt
    1 tbsp grated lemon zest, fresh
    1 3/4 sifted flour
    2/3 sugar
    2 eggs well beaten
    1/4 c canola
    1/4 c lemon juice


when I don't have yogurt I've used buttermilk and they still turn out great!


preheat oven to 400 degrees, insert paper liners in muffin tins. Wash bluseberries, spread on paper towels to blot up water.

Sift flour with sugar and baking powder into mixing bowl. in second bowl beat eggs well beat in yogurt, canola, lemon zest and juice. Stir in dry ingredients only to mix batter should be lumpy. Fold in berries DO NOT OVERMIX

Bake 20-25 minutes loosen with spatula serve hot or cool on rack
