    * Broccoli, fresh, 3 cup, chopped and steamed until crisp-tender
    * Onions, raw, 1 cup, chopped (white or yellow, about 1 medium)
    * Canola Oil, 1 1tsp
    * Milk, Fat Free, Skim, 24 oz
    * Salt, .25 tsp
    * Pepper, black, .25 tsp
    * BacOs Bacon Bits, 1.5 tbsp
    * Egg, fresh, 2 large
    * not included in nutritional analysis - 1 tsp vegetarian "chicken" broth mix or seasoning (several good brands are usually available but they are not in the SP database... please adjust the salt according to your needs)


1) chop broccoli or use frozen chopped broccoli and steam to desired tenderness (microwave is fastest) - drain if necessary
2) chop onion and saute until golden in a larger pan (that can hold all the other ingredients)
3) while onions are cooking down - mix up the eggs and seasoning mix in a large bowl using a wisk, the color should be uniformly yellow and a little foamy
4) add the milk to the eggs and mix well then when onions are ready, add the milk/egg mix all at once plus the salt and pepper
5) continue cooking at medium heat until the soup thickens a bit (about 10 minutes) then add the broccoli
6) ladle into 2 bowls and sprinkle with the fake bacon bits

* serves 2 as a meal with whole grain bread or four as an appetizer
