    1 Spaghetti squash (roasted/steamed and forked so stringy )
    1 -2 cups shredded mozzarella cheese (part skim)
    1/2 cup Parmesan cheese
    2 eggs (or 1 egg and 2 egg whites)
    1-2 teaspoons fresh or dry oregano
    1/4 - 1/2 cup of tomato sauce
    pepper to taste
    your choice of toppings (ex. mushrooms, peppers, onions, zucchini,etc,)


You can either steam the squash in your microwave or bake in oven at 400 degrees on a cookie sheet until done.

Place 3 cups of squash, 2 eggs and shredde dmozzarella chees in a bowl. Stir in combine. (you don't have to beat the eggs but they will mix better.)

Place in a pie dish a small oblong pan, bake at 400 degrees for 10 minutes.

Remove from oven and top with tomato sauce and whatever you desire, (if using meat the nutritional numbers will change, sauteed spinach, mushrooms, etc. Top with cheese.
