    1 lb. ground venison
    2 tbsp dry bread crumbs
    Salt and pepper to taste
    1 tsp thyme
    1 egg, slightly beaten
1 large onion, sliced and separated into rings
1 (10 1/2 oz) can low sodium beef broth
8 oz mushrooms (about 3 cups), sliced
    2 tbsp cold water
    2 tsp cornstarch

In a large mixing bowl, combine ground venison, bread crumbs, salt, pepper, thyme, and egg, and shape into 4 patties, each about 3/4-inch thick. In a non-stick skillet over medium heat, cook venison patties, turning when necessary, until brown, about 10 minutes; drain on paper toweling to absorb excess fat. Add onoins and mushrooms to the skillet and saute for just a minute or two, till lightly browned. Add the broth. Heat to boiling, then reduce heat, cover and simmer until patties are cooked through, about 10 minutes. Remove patties from skillet and keep warm. Heat onion/mushroom mixture to boiling. Combine water and cornstarch (no lumps) and add to onion/mushroom mixture. Let it come to a boil and stir for 1 minute, or until nicely thickened. Pour sauce over beef patties and serve.
