Bell pepper halves stuffed with beef, veggies and couscous in a tomato sauce. Bell pepper halves stuffed with beef, veggies and couscous in a tomato sauce.
Number of Servings: 4


    - 4 bell peppers, halved
    - 1/2 lb. ground beef
    - 1 c. mushrooms, chopped
    - 2 cloves garlic
    - 1/2 large onion, chopped
    - 1 small zucchini, chopped
    - 1 c. partly skim mozzarella, shredded
    - 1 c. marinara sauce
    - 1/2. Israeli couscous, cooked
    - 1 tsp Italian season
    - salt and pepper to taste


*Prior to preparing filling, cook 1/2 Israeli couscous according to package instructions

1. Brown the ground beef over medium heat with the onions and garlic.

2. Add mushrooms and zucchini and cook until tender.

3. Add Italian seasoning, salt and pepper to taste and marinara sauce. Simmer for ~10 min.

4. Add halved peppers to boiling water and boil for about 3 minutes, just until sauce. Carefully remove from water and drain.

5. Place peppers in a large baking dish with about 1/2 inch of water in the bottom.

6. Add cheese to filling mixture and blend well. Divide filling evenly among the pepper halves.

7. Cover and bake peppers 30-45 min at 350 degrees C.

Serving Size: Makes 4 servings (each serving is 2 stuffed pepper halves)
