Number of Servings: 15


    1 handfull of chopped and rinsed Peppermint Leaves
    about half the amount Basil Leaves
    2 big Garlic Cloves
    3-4 Tbsp Parmesan cheese, grated
    ca. 35gr Walnuts
    salt, pepper and half a tsp of brown sugar
    ca. 8-9 Tbsp Olive Oil


blend the herbs, nuts, garlic and cheese in a food processor. Add salt, pepper and sugar. Then add about 5-7 Tbsp of Olive Oil until the pesto has a creamy yet spreadable texture. Fill in a glass and cover with another Tbs or two of Olive Oil.
You need to do that, so the Pesto can be stored without spoiling too soon. If the pesto is covered entirely with olive oil, it can be stored in the fridge for a little while. If you plan on using the Pesto right away, omitt the last 2 Tbsp of Oil of course.

Serving Size: ca. 15 tsp of Pesto. Depending on your portion of Pasta, you might need 2 or 3 tsp
