Ingredients:
Broccoli, fresh, 200 grams
Zucchini, 220 grams
Mushrooms, fresh, 100 grams
Garlic, 2 cloves
Red Onion,1 medium (2-1/2" dia)
buckwheat pasta, 100g
Gammon Steak, cooked, 220 g
Cheddar Cheese, 2 oz
Cabbage, savoy, fresh, 70 grams
Brussels sprouts, fresh, 70 grams
Canned Tomatoes, 1 can
herbs, salt and pepper to taste
Directions
cook the pasta according to the manufactureres instructions and drain.
dry fry the chopped garlic, sliced onion until onion almost soft (5 mins) then add the mushrooms for a further 3 minutes.
meanwhile steam the rest of the chopped vegetables. when cooked add to the onion mixture along with the diced gammon. add the canned tomatoes and stir through.
pour into a casserole dish and add the pasta, stir to mix well.
grate the cheese and sprinkle on the top. Place uncovered in the oven for 10-15 mins or until cheese is golden brown.
