    2 Tb unsalted pepitas (pumpkin seeds)
    1 Tb unsalted butter
    1/2 tsp freshly grated lime zest
    2 Tb freshly squeezed lime juice
    1/4 tsp chili powder
    1 lb salmon, divided into 3 or 4 servings
    1/2 tsp salt
    1/4 tsp pepper


1. Gently toast pepitas in a dry sautee pan over medium-low heat, stirring constantly, until browned and fragrant. Place in a bowl.
2. In the same bowl, add butter, chili powder, lime zest and lime juice.
3. Generously coat a large skillet with cooking spray. Salt and pepper the salmon, and cook over medium heat until cooked through (2-4 minutes per side). Remove from pan and transfer to a plate.
4. Place butter and lime mixture in hot pan, and stir (deglaze) until butter is melted. Serve sauce hot over the salmon.

Serving Size: Make 3 or 4 servings (3-5 oz each)
