This is a twist of the old salmon, eggs and rice from the southern days of old. This is a twist of the old salmon, eggs and rice from the southern days of old.

    6 eggs
    1 bag Uncle Ben's Minute Brown Rice
    3 slices of turkey bacon
    1 3 oz can of tuna
    salt and/or pepper to taste


I cook my bacon in the microwave with several papertowels and I like my eggs scrambled well. Everything ends up being ready all about the same time.


Prepare rice according to direcitons on box; while rice is cooking scramble and cook 6 eggs and cook turkey bacon according to desired consistency; open can of tuna and empty into medium bowl; add in other three ingredients as they finish cooking; mix well; add salt and/or pepper to taste.
