Ingredients

    1/2 oz almonds (about 12)
    1/2 Tb butter
    3/4 C frozen mixed beans (I like the Prince Edward Island blend, because it includes carrots)
    1/2 C baby carrots

Directions

1. Cook beans according to package directions (boil or steam for approximately 5-7 minutes). Set aside, empty water from pan.
2. In the same pan (once the leftover water has been evaporated), place almonds. Stir constantly over medium heat until toasted, approximately 2-4 minutes.
3. Add butter, salt, and pepper. When butter is melted, remove from heat and add beans back in. Toss together.

Serving Size: makes 3 1/2 C servings
