    -4 large zucchini (18 inch long- from garden) cut in half lengthwise, then again to about 9 in long or equivlent if using smaller zucchini
    -2 small zucchini (filling, diced)
    -2 small yellow squash (filling, diced)
    -2 cups rice, prepared
    -1 sweet onion
    -1 garlic clove or Tbsp minced garlic
    -2 lbs. ground turkey, lean
    -1 can mushrooms pieces and stems
    -1 can petite diced tomato
    -1jar pasta sauce
    -4 oz casserole cheese, shredded


Cut each casserole into 8 portions, only 166 calories if you use lean ground turkey


I take 4 large zucchini from garden, cut in half, remove seeds and boil until fork tender. I cut addl zucchini and yellow squash dice and add to water to boil. Then I make rice according to directions. Then I dice 1 onion and large clove garlic and saute, add 2 lbs ground turkey/turkey sausage or lean ground beef until done. Drain zucchini/squash well and layer large pieces in casserole dishes. The diced zucchini/squash set aside. Combine in large bowl the cooked meat/garlic/onion with 2-3 cups rice (whatever you prefer), the diced zucchini/squash, can of mushrooms (or fresh sauted), can of petite diced tomatoes and a jar of pasta sauce...combine and stuff in zucchini. Then I add a little cheese on top and bake until cheese is melted about 15-20 minutes.
