Number of Servings: 12

Ingredients

    3 lbs corned beef brisket
    4 tbsp olive oil
    8 cups beef broth
    1 tsp ground oregano
    1 tsp ground basil
    1/2 tsp ground thyme
    1/2 cup fresh parsley, chopped
    2 medium onions, chopped
    2 stalks celery, chopped
    8 ounces cooked pearl barley
    1 can tomatoes, chopped
    Salt and pepper to taste

Directions

Sauté beef in oil for 5 minutes until well-browned. Add remaining ingredients and simmer for 1 hour.
Serves 12.

    Incredible!
    I doubled this recipe for a church supper on St. Patrick's Day. It was a huge hit. One 3# brisket was plenty of meat. I cooked the meat ahead of time in a crockpot so I could cool it and remove the fat. The combination of spices was awesome! I also added cut carrots and shredded cabbage. - 3/17/10
