    3 cups Coconut Milk
    1.5 cup Water
    2 lbs Chicken Breast, chopped
    1..5 cups Carrots, medallions
    2 cup Potato
    1 cup Dole Pineapple Chunks, unsweetened
    1 medium Onion, rough chopped
    3 tbsp yellow curry paste (thai)aroy-d brand


brown chicken in oil, add onion, then thin curry paste out with a little coconut milk or water, add remaining milk and water, let simmer until potato cooks through
