Introduction

Ingredients

CRUST:
50 reduced calorie vanilla wafers
1/4 cup melted butter
2T. sugar
1 tsp. orange rind
cooking spray
CREAM CHEESE LAYER
3 oz. cream cheese, reduced fat (room temp.)
1 tsp. vanilla
1 tsp. orange zest
juice of an orange
CHOCOLATE LAYER
1/3 c. semisweet chocolate chips
1 T. butter
FILLING
2 quarts strawberries
1/2 c. water
2/3 c. sugar
2T. cornstarch
1T lemon juice(or orange)
Tips
The prep time depends on how pretty you want your pie to be. In the picture the prettiest ones were picked and quartered and arranged on a plate so they could be arranged atop the rest of the strawberries that had been sliced and lain horizontally.
Directions
Preheat oven to 350 degrees.
To prepare crust, place wafers in a food processor and process until finely ground. Add melted butter, 2 T sugar and orange rind and pulse ten times or just until wafer crumbs are moist. Press into bottom and up sides of a 9 inch pie plate coated with cooking spray. Bake at 350 degrees for 15 minutes; cool on a wire rack.
In a small saucepan melt chocolate and 1 T butter on low heat until evenly melted and mixed. Spread evenly on the bottom of the pie shell and set aside to cool.
In a small bowl mix cream cheese with vanilla and orange zest; add orange juice until it is a spreadable consistency. Spread the cream cheese mixture evenly on top of the chocolate layer already in the pie shell and set aside.
To prepare the filling mash 2 cups of strawberries (overripe are perfect for this part) and combine with 1/2 cup of water in a small saucepan. Bring to a boil and cook five minutes stirring occasionally.
Pour mashed strawberry mixture through a sieve into a bowl to reserve 1 cup of liquid. Discard pulp & add water to juice if necessary.
Return juice to the pan and add sugar & cornstarch, whisk well and bring to a boil. Cook one minute stirring constantly. Reduce heat and cook two minutes. Remove from heat and stir in lemon juice.
Arrange a layer of sliced strawberries in the prepared crust. Spoon a third of the sauce over the strawberries. Arrange remaining strawberries on top, then spoon on remaining glaze. Chill for at least three hours and serve with whipped cream.
