Ingredients

    Pork tenderloin or steaks (cooked leftovers), ~1 lb
    Sweet Corn, Fresh, 1 ear
    Black beans, 1 can
    Red Ripe Tomatoes, 3 cherry
    Green Chili Peppers, canned
    Onions, raw, 1 small
    Mission Carb Balance flour tortillas, 3
    Cheddar or Colby Cheese, Low Fat, 2 cup,
    Jalapeno, 1 pepper
    Green Peppers (bell peppers)
    Frontera green chile enchilada sauce
    Lime Juice

Tips

Add sour cream, salsa, and cilantro for garnish! (not included in nutrition counts)


Directions

Chop/dice/process all vegetables. Chop cooked pork finely. Mix vegetables and pork. Construct casserole by layering the meat/veggie mixture, torn tortillas (1 per layer), and cheese (reserve some for topping). Pour green chile sauce over casserole. Top with remaining cheese. Bake @400 for ~45 minutes.
