    1/2 lb. wheat spaghetti
    2 large eggs
    15 oz. light ricotta cheese
    3/4 cup plus 2 tablespoons parmesan regiano cheese, grated
    1/4 cup plus 1/2 cup part skim mozzarella cheese
    1 teaspoon Italian seasoning
    1/2 teaspoon garlic powder
    1 teaspoon olive oil
    12 oz. fully cooked sweet italian chicken sausage
    2 cups baby bella mushrooms, sliced
    1 cup marinara sauce


Cook the spaghetti per package instructions and drain when cooked al dente. While spaghetti is cooking, peel the skin off of the sausage and lsice into 1/4-inch slices and saute in 1 tsp. of olive oil over medium-high heat until lightly browned. Remove sausage with a slotted spoon into bowl. Saute the mushrooms in the same pan until they release their moisture and are cooked.

In a large bowl, beat the two eggs. Add the ricotta cheese and 3/4 cup of the parmesan cheese, 1/4 cup of the mozzarella cheese, the Italian seasoning and the garlic powder. Stir until combined well. Add the drained spaghetti, sausage and mushrooms. Stir until combined well. Pour into a round pan (7" round with high sides works well) sprayed with nonstick spray. Top with the marinara sauce, remaining 1/2 cup mozzarella cheese and remaining 2 tablespoons parmesan cheese. Bake for 30-40 minutes until cheese is melted and juices are bubbling around the edges - YUMMY!
