    - Campbell's low sodium chicken broth, 1 can w/ water
    - Shallots, 2 tbsp chopped
    - Garlic, 3 cloves crushed
    - Celery, raw, 2 stalk, large (11"-12" long) thinly sliced
    - Carrots, raw, 0.25 cup, chopped
    - Yellow Peppers (bell peppers), 0.5 pepper, large (3-3/4" long, 3" dia) chopped
    - Chicken Breast, no skin, 1 breast, bone and skin removed, cut into 1/2 inch pieces
    - Ginger Root, 1 tsp, grated
    - Lemongrass, 1 tbs, thinly sliced
    - Kikkoman Lite Soy Sauce, 1 tbsp
    - Lemon Juice, 2 wedge yields
    - Delverde Filini soup noodles, 1 small handful


- Heat chicken pieces on medium in pot, with a couple drops olive oil, until starts to cook on outside
- Add garlic, shallots (can substitute red onion), carrots and celery, and heat until aromatic
- Add broth and turn up to let boil
- Once boiled, turn down to med-low heat, to simmer
- Add yellow pepper and seasonings (lemon juice, soy sauce, lemongrass, ginger, salt and pepper to taste; lemongrass and ginger add some heat and an Asian flavour, basil and thyme are also good)
- Simmer until chicken is cooked through
- Add soup noodles and heat until they're soft
