This light and refreshing soup is perfect for hot summer days or nights! This light and refreshing soup is perfect for hot summer days or nights!
Number of Servings: 12


    64 oz Low-Sodium Tomato Juice
    8 oz clam juice
    16 ounce (1 lb) salad shrimp
    1 SlimCado (Florida Avocado), peeled, diced
    2 medium cucumbers, peeled, de-seeded and diced
    3 large tomatoes, diced
    1 medium red onion, diced
    1 bunch fresh cilantro, approximately 5 Tbsp, chopped
    2 Tbsp lemon juice or to taste
    1 Tbsp low-sodium worcestershire sauce
    Several drops hot pepper sauce (to taste, optional)
    1/2 tsp black pepper (to taste, optional)


Use fresh basil if you don't like the cilantro, but definitely use fresh herbs as it gives the right balance! Wait until right before serving to add any additional seasoning as it takes awhile for the flavors to meld.


Place all ingredients in a large bowl and mix together. Refrigerate at least 2 hours, it's even better overnight!
