    1 lb. bag frozen chopped spinach
    2 cups diced tomatoes, in juice
    1 cup uncooked orzo pasta
    9 oz. chicken breast, shredded
    6 oz. fat free-feta
    1 cup of roasted red peppers
    1 tsp. cumin
    1 tsp. curry powder
    1 tsp. salt
    freshly ground black pepper


Defrost spinach in casserole dish in microwave. Add diced tomatoes, cooked shredded chicken, 4 oz. of the feta, red peppers, and spices. Cook orzo separately according to package, and then mix with the rest of the ingredients. Top with the remaining feta and bake in a 350 oven for 20-30 minutes, until well heated.
