    1 15 oz. can of black beans, drained and rinsed
    1/4 cup water
    2/3 cup dark chocolate chips or 4 oz. dark chocolate, melted
    2 tbsp. canola oil
    1 1/4 cups sugar
    2 tbsp. ground flax seeds
    6 tbsp. water
    1 tbsp. vanilla extract
    2 cups whole wheat flour
    2/3 cup all purpose flour
    1/4 cup cocoa powder


You can substitute the ground flax and 6 tbsp. of water for 2 eggs.


Puree beans in a blender or food processor with the 1/4 cup water. Add in the melted chocolate, oil, and sugar. Combine ground flax with the 6 tbsp. of water and let sit until thickened. Add this to the bean mixture along with the vanilla and stir thoroughly. Add in the flours and cocoa powder and mix until everything is well incorporated. Roll the dough into 1/2 tbsp. sized balls and place on a greased baking sheet 1-2 inches apart. Flatten the balls with the bottom of a glass and bake in a 350* F oven for 5 minutes. Remove from oven and transfer to wire racks to cool completely.
