Ingredients

2 hard boiled eggs, finely diced
1 Tbsp 0% Greek Yogurt
1/2 Tbsp Dijon Mustard
1/2 Cup Heirloom Cherry Tomatoes, largely diced
dash of ground sea salt
dash of cracked black pepper
Directions
Finely dice 2 hard boiled eggs and add to a small mixing bowl.
Add 1 tablespoon of 0% Greek yogurt and 1/2 tablespoon of Dijon mustard.
Mix until hard boiled yolk incorporates with yogurt and mustard until creamy.
Add a dash of ground sea salt and a dash of cracked black pepper (to taste).
Dice 1/2 cup of heirloom cherry tomatoes and add to bowl, mixing to distribute tomatoes.
This quick and simple egg salad is great over a piece of whole wheat toast or on top of a bed of mixed spring greens, no need for additional salad dressing!
