Ingredients

    6oz 70% cacao or higher chocolate

    2 eggs
    1tsp vanilla extract

    1c coconut milk (canned!)



Directions

chop the chocolate into bite size pieces (I do this with a rolling pin and a ziploc bag.)

Blend the chocolate pieces with the eggs and vanilla in a high speed blender. I prefer an immersion blender if possible.

scald the coconut milk either on the stove or in the microwave by heating it to where it is steaming but not bubbling. It should be warm enough to melt chocolate but NOT curdle the eggs.

slowly add coconut milk to egg mixture while blending. (This is why the stick blenders are more convenient. The friction from the blender and heat from the milk will cook the eggs, like in a blender hollandaise sauce)

in 4 8oz ramekins put a small handful of raspberries.
Pour the custard mixture over them. Cover and chill in the fridge for 2 hours.

serve with extra raspberries, and chocolate shavings.
